What’s for dinner: Herb-Crusted Salmon with Spinach Salad

“Herb-Crusted” sounds so much better than “… With Breadcrumbs,” doesn’t it? But that’s basically what you’ve got here: Simple salmon, basted with mustard and patted with — not even dredged in — breadcrumbs.

Not to belittle the simplicity; on the contrary, that’s what makes it work so well. And you get to throw away the foil that lines the pan, which means no dish duty!

Cost of ingredients: $5.21. I already had the salmon (thank you, Costco), Dijon mustard, olive oil, salt and pepper.

Substitutions: No red onion! Instead of a raw spinach salad, I steamed the leaves and served them on the side with blood orange olive oil (it gets used twice in one week!) and balsamic vinegar.

As easy as they said? Indeed. The most time-intensive task was making breadcrumbs.

How’d THAT go over? Thumbs-up. I’m not sure how it will reheat in a microwave, though — maybe I’ll have to opt for the toaster oven instead.

Would I make it again? Well, I already have, in another incarnation. It is good enough to keep around, no matter which fish you use.
